    Spring has finally arrived, so why not celebrate the season’s plentiful bounty with a range of delicious and fuss-free one-pot dinners?

    These ingenious one-pot recipes pack in the flavour while saving you time and minimising washing-up.     1. Salmon & asparagus one-pot gratin

    Transform seasonal asparagus into this creamy one-pot with flaky salmon and a crunchy breadcrumb topping. It’s a great family meal to enjoy spring’s seasonal produce.

    2. One-pot braised lamb breast with beans, carrots & mint

    If there’s one meat that signifies the start of spring, it’s got to be lamb. Try our feed-a-crowd dish with flageolet beans, fresh mint sauce and root veg for a stunning seasonal centrepiece.

    3. Herby spring chicken pot pie

    This pot pie boasts a creamy filling topped with super-crisp scrunched-up filo pastry. It’s a perfect way to use up frozen spinach and peas, as well as leftover cooked chicken from a roast. A winner all round.

    4. Baked asparagus risotto

    Why slave over a hot stove when you could bake a risotto to creamy perfection? This vegetarian one-pot uses asparagus soup and vegetable stock to add plenty of flavour to the rice, plus shavings of parmesan (or vegetarian alternative) to finish.

    5. Sausage, kale & gnocchi one-pot

    Feed the whole family with this easy gnocchi dish, which takes just 20 minutes from start to finish. Use a pack of pork sausages and fresh chicken stock, along with chilli and fennel seeds to add plenty of flavour.

    As well as being budget-friendly, chicken thighs add plenty of flavour to this veg-packed one-pot. The garlicky couscous is balanced perfectly with a light parsley, lemon zest and olive oil dressing. Feel free to swap the cavolo nero for curly kale, if you like.

    7. Spicy asparagus & chorizo baked egg

    If you’re dining alone, treat yourself to this spicy meal-for-one that can be on the table in just 25 minutes. Hot smoked paprika, flavourful chorizo and half-fat crème fraîche take it up a notch, and it’s a great way to put seasonal asparagus centre stage.

    8. Smoked haddock and leek chowder with cheddar dumplings

    This creamy, comforting chowder is the perfect dinner for cooler spring evenings. Swap the haddock for any smoked white fish, or use oily fish, such as salmon or trout. Topped with moreish cheddar dumplings, it’s guaranteed to become a family favourite.

    Give budget-friendly tuna pasta a makeover with this sophisticated twist on the student staple. We’ve added creamy mascarpone, punchy capers and plenty of lemon zest.

    Mascarpone and mature cheddar make this a must-try for cheese lovers. It’s a great way to use up leftover ham hock, and you can use frozen peas for extra convenience.
