    Harira (Moroccan Tomato, Lentil & Beef Soup)

    Harira is a tomato-based soup featured at the center of many Moroccan tables during the month of Ramadan. It’s often enjoyed as part of iftar—the meal served to break the fast each evening—along with dates, milk, hard-boiled eggs, semolina pancakes and chebakia (sesame cookies). This version features chickpeas, lentils, beef and noodles in a fragrant tomato broth, but there are endless variations on the soup.

    Creamy Garden Tomato & Quinoa Soup

    This hearty garden tomato soup is loaded with vegetables. To thicken the soup, we puree it before adding the quinoa. Half-and-half and milk add creaminess and cut the acidity of the tomatoes, adding balance and letting the garden-fresh flavors shine. Serve with crusty bread or grilled cheese for dipping.

    Tomato Florentine Soup

    This hearty tomato Florentine soup has great tomato flavor from caramelized tomato paste and crushed tomatoes, with plenty of spinach that complements the flavors. The cheese and lemon topping with a hint of dried oregano adds an extra pop of deliciousness.

    White Bean Soup with Tomato & Shrimp

    With capers and olives, this heart-healthy soup draws inspiration from Italian puttanesca sauce. Serve with crusty whole-grain bread to soak up the broth.

    Slow-Cooker Beef-Barley Soup with Red Wine & Pesto

    Hearty, thick, rich–this is just how a winter soup should be. The meat and carrots become tender yet retain their texture, and the kale offers freshness. Garnish each serving of this slow-cooker beef and barley soup with additional pesto and fresh basil and oregano sprigs, if desired.

    Tuscan White Bean Soup

    A pound of dried beans is the inexpensive foundation for this simple, hearty meal. Serve it with slices of whole-wheat bread or a side salad for a complete and satisfying lunch or dinner.
