    These sweet potato recipes prove just how versatile this simple vegetable can be. Enjoy sweet potato from breakfast to dinner in all forms — baked, mashed, spiralized, you name it! It’s truly the best ingredient for endless sweet and savory meals.

    Sweet potatoes have always been one of my favorite vegetables to cook with. If you haven’t fallen in love with sweet potatoes yet, let me tell you why you should.

    • They’re a nutritional powerhouse that’s high in fiber and loaded with antioxidants.
    • They have a creamy texture and a hint of sweetness that makes them such a versatile ingredient in a wide range of recipes.
    • There are many ways to prep and cook them. You can roast them in cubes, spiralize them into noodles, mash them, and so much more. No matter which cooking method you choose, they’ll fill you up and add a welcome pop of sweet-savory flavor to any meal!

    Best Sweet Potato Side Dishes

    These sweet potato side dishes are simple to make and don’t require much alteration to the original spud. Simply dice a few up to roast on a sheet tray, slice them into wedges and bake them, or spiralize them into curly fries.

    Roasted Sweet Potatoes: This is my favorite ingredient to meal prep! It can be used for a breakfast casserole, macro bowls, or as a simple vegetable side dish to complete your dinner plate.

    Baked Sweet Potato: Nail perfectly baked sweet potatoes with this recipe. Slab it with butter, salt, and pepper for a classic side, or stuff it with veggies and proteins for a full meal.

    Creamy Mashed Sweet Potatoes: Nothing beats a side of creamy mashed sweet potatoes, especially during the holidays!

    Healthy Sweet Potato Casserole: This version is topped with the best nutty pecan crumble and sure to be a hit for Thanksgiving.

    Sweet Potato Salad: I love this as a nutrient-dense weeknight meal, but it definitely shines at any holiday dinner. It’s the perfect combination of roasted sweet potatoes, lentils, cranberries, fresh herbs, and my favorite maple mustard tahini dressing.

    Curly Sweet Potato Fries: Put your spiralizer to use to make these crispy curly sweet potato fries!

    Prosciutto-Wrapped Sweet Potatoes: Sweet potato wedges are wrapped with prosciutto and brushed with a maple balsamic glaze. The best holiday appetizer!

    Healthy Sweet Potato Dinner Ideas

    When it comes to dinner, think outside the box! Mix sweet potato noodles into a salad, blend them into the creamiest fall soup, or completely transform them into gnocchi.

    Sweet Potato Soup: This fall soup is the perfect creamy blend of sweet potato, carrots, fresh ginger, and warming spices.

    Sweet Potato Noodles, Cabbage, and Lentil Salad: If warm salads are your jam, you’ll love this sweet potato version. It’s loaded with veggies and plant-based protein.

    BBQ Chicken Stuffed Sweet Potatoes: This is my favorite way to stuff sweet potatoes! It starts with shredded chicken coated in BBQ sauce, then it’s topped with sliced red onions and cilantro.

    Sweet Potato Gnocchi: If you’ve got time, turn sweet potatoes into chewy gnocchi for the best gluten-free pasta dish!

    Sweet Potato Brownies: Dinner isn’t complete without dessert! Mashed sweet potatoes are the star ingredient in these soft and rich vegan brownies.

    Sweet Potato Breakfast Recipes

    Add more healthy vegetables to your breakfast routine with delicious sweet potatoes. The dose of vitamins and nutrients will get your day started on the right foot!

    With so many sweet potato recipes to choose from, you certainly can’t go wrong with a basic (but not boring) baked sweet potato. It’s an easy and healthy side dish recipe. Watch how I make it in the video below!

    • Prep the potatoes. Preheat your oven to 400°F and poke 4 to 5 holes in each sweet potato with a fork or sharp knife.

    • Bake the potatoes. Place the sweet potatoes on a baking sheet and bake in the oven for approximately 60 minutes, or until soft. Then top with butter or ghee and sprinkle with salt and pepper.
