    Mondays are my least favorite day of the week. The to-do list is long, the weekend feels way too far away, and spending hours in the kitchen is the absolute last thing I want to do. That’s exactly why recipes like Don’t Want to Cook Monday Chicken exist.

    This easy dinner comes together in one 9×13-inch pan with just five ingredients: chicken thighs, frozen broccoli, condensed golden mushroom soup, sour cream, and a spoonful of prepared horseradish. The result? A juicy, flavorful, no-fuss meal that’s comforting enough to cure even the worst case of the Monday blues—and easy enough to earn a spot in your weekly dinner rotation.

    How to Make Don’t Want to Cook Monday Chicken

    The hardest part of making Monday Chicken, a recipe submitted by community member Menwith Hill’er Back Home, is waiting for the chicken to bake. Start by arranging a bag of frozen broccoli in a sprayed 9×13‑inch baking dish, then place four seasoned, boneless chicken breasts halves on top. 

    In a bowl, mix together a can of condensed golden mushroom soup, sour cream, and the prepared horseradish, then pour that creamy mixture over the chicken and broccoli. Bake uncovered at 350  degrees F for about an hour, let it rest briefly to thicken, and you’ll have a comforting, one‑dish dinner ready without fuss.

    Why the Recipe Works

    Velvety sour cream, ultra-savory golden mushroom soup, and zingy horseradish combine to create a sauce for the chicken and broccoli that’s flavorful enough to stand on its own. But the dish’s mild profile also makes it easy to dress up with your own additions, which the recipe creator encourages.

    “Tired of everything being spicy and looking for a quick, nice dinner with a subtle flavor?” the recipe submitter says. “Try this! Chicken breasts are laid on a bed of broccoli, and blanketed with a mushroom sauce with a hint of horseradish. Great with garlic bread! Of course—if subtle isn’t what you’re looking for—you can spice this up all you want!”

    Tips, Tricks, and Variations

    • If you aren’t a fan of horseradish, swap in Dijon mustard, grated ginger, minced garlic, or even curry powder—anything that will boost the heat level of the sauce. Or leave it out entirely.
    • Several reviewers recommend substituting the breasts with boneless chicken thighs, noting that the higher fat content makes for a more tender end result. No matter what cut you pick, though, home cooks also like to season the chicken with salt and pepper to add more flavor.
    • Use whatever condensed soup you have in your pantry. Tried-and true favorites include cream of broccoli, cream of mushroom, and cream of chicken.
