    Super easy to make, this Crunchy Roasted Edamame will be one of your go-to snacks. Edamame are young soybeans, harvested before they’ve ripened. These fiber-filled, protein-packed beans have a mild, nutty flavor, which is enhanced when roasted. The olive oil helps them crisp up, and a sprinkling of salt enhances their flavor even further.     Tips from the EatingWell Test Kitchen

    These are the key tips we learned while developing and testing this recipe in our Test Kitchen to make sure it works, tastes great and is good for you too! 

    • To quickly thaw frozen shelled edamame, rinse them under warm water for about 1 minute. After rinsing, drain the edamame well and pat them dry.
    • Let the edamame cool on the baking sheet after roasting. This step helps the beans firm up, resulting in a desirable crunchy texture.
    • Get creative with the flavor by adding your favorite spice combinations and sauces. We like them with smoked paprika, garlic powder or onion powder, or tossed with soy sauce and sesame seeds after roasting.

    • Edamame are loaded with plant protein, fiber and healthy fats—a perfect combination for lasting satisfaction and blood sugar control. The protein in edamame contains all nine essential amino acids, making it a complete, high-quality protein. Edamame are also rich in nutrients, like phosphorus, which is necessary for healthy bones, and potassium, which can help regulate blood pressure.
    • Olive oil adds some powerful polyphenols to this snack, as well as heart- and brain-healthy fats. Olive oil also contains vitamin K for healthy bones, and vitamin E, which supports skin health.
