    Sunny Anderson’s Herb Butter Is Perfect for Christmas

    Butter makes everything better, and the internet knows that best. From viral butter boards to our highly-rated banana bread butter, we’re here for the butter fixation. And in the midst of it all, Food Network star Sunny Anderson just shared a compound butter recipe that’s worth trying this season.

    On a recent segment of The Drew Barrymore Show, Anderson prepared an easy, versatile spread alongside Ross Mathews that’s perfect for any holiday table. You likely have most of the ingredients on hand to whip up the steakhouse-inspired, herbaceous butter.

    In a bowl with softened salted butter, Anderson makes her “go-to compound butter” with scallions, parsley, thyme, lime zest, garlic powder, whole grain Dijon mustard, Hungarian paprika for a “smoky and spicy” flavor and Worchester sauce. With a rubber spatula, The Kitchen co-host folds in all of the seasonings into the butter until uniform. Place the mixture on plastic wrap and wrap it up into a log, storing in the freezer until you’re ready to serve. Yep, that’s it!

    This savory butter would be perfect on fresh bread, but Anderson has some more unique ideas to use it up.

    “You can think about grilling vegetables… especially if you’re in an area where you don’t have to walk footsteps in the snow around the holidays, use the grill,” she shares. Mathews also notes that the butter would be lovely added to meat before it hits the grill. 

    So slather this butter on your corn on the cob, whole-wheat sourdough or use it as a finishing touch for your steak. Eating butter every day can cause an uptick in your saturated fat intake, which in turn could negatively impact your heart health. But at EatingWell, we believe that any food or drink can be incorporated into a healthy eating pattern, and that includes butter. Moderation is key, so a seasonal compound butter shouldn’t stray you away from your nutrition goals.
