    When it comes to potatoes, everyone has their favorite variety—mashed, roasted, scalloped. But this year, one humble slow cooker dish rose above them all: Swamp Potatoes and Sausage. It’s a smoky, buttery mix of golden potatoes, smoked sausage, green beans, and Cajun seasoning, cooked low and slow until the potatoes are tender and the whole pot smells like a Sunday dinner. 

    It might not have the glamour of a gratin or the crispiness of fries, but this comforting, one‑pot wonder has clearly captured hearts (and saved buttons) across the Allrecipes community. As it turns out, Swamp Potatoes and Sausage even got reviewer Kelly Fifer invited to a party. 

    “Made this for an office potluck,” Kelly wrote. “Followed the recipe except I used canned green beans. Glowing praise. Everyone wanted the recipe and I got invited to the cookout.”

    What Are Swamp Potatoes?

    While TikTok launched swamp potatoes to social media stardom this past year, the specialty has been long loved by many Southerners. Also known as smothered green beans, noted writer Heather Martin in an article about the dish for “Today,” the nickname “swamp potatoes” was likely inspired by its deep South roots and its resemblance to the appearance of the bayou’s edge at low tide.

    Like many tried-and-true comfort foods, there’s no single way to make Swamp Potatoes—and home cooks have plenty of opinions. Some swear by canned green beans, while others insist on fresh. Smoked sausage or andouille are the usual go-tos, but you’ll also see folks using kielbasa. Still, there are a few non-negotiables that’ll guarantee success: Stick with yellow potatoes (not Russets), don’t skimp on the butter, and make sure to load it up with bold seasoning, such as Cajun spice and French onion soup mix.

    How to Make Our Most-Saved Potato Dish

    To make the incredibly popular dish, start by tossing the chunks of potatoes and chopped onion into your slow cooker. Drizzle with olive oil and season with salt, pepper, and Cajun seasoning, and stir so every piece gets coated in flavor. Lay slices of smoked sausage and fresh green beans on top, sprinkle on the onion soup mix and garlic powder, and dot the top with butter.

    Cover and cook on low for about 6 to 7 hours (stirring a couple times), until the potatoes are tender and everything smells like comfort. Serve it warm—ideally with crusty bread to soak up all the rich, savory juices.
