    This three-ingredient blueberry-chocolate bark from Instagram foodie @fitfoodieselma delivers both flavor and real nutritional benefits. Made with antioxidant-rich blueberries and dark chocolate, it strikes the perfect balance between rich and refreshing—with no baking or lengthy ingredient lists required.

    In just a few minutes, you can prep a freezer-friendly dessert that’s easy to make ahead of time. It’s the kind of thing you’ll be glad to have on hand after dinner or whenever you want something cold and chocolatey.

    For this recipe, you only need 2 ounces of 80% dark chocolate, 1 cup of blueberries and 1 tablespoon of shredded coconut. Before following along, have your dark chocolate melted and ready to go.

    In the video, Selma takes her blueberries and melted chocolate and adds them to a bowl. She combines the two ingredients by mixing them gently with a spoon. Then, on a plate lined with parchment paper, she spreads out the chocolate-covered blueberries in an even layer. Make sure there are no gaps in between so the layer chills into a solid, rectangular bark.

    Before putting the dessert in the refrigerator, Selma tops off the soon-to-be bark with shredded coconut. This part is entirely optional, but we think the combination of blueberries and coconut will add a needed sweetness to the dark chocolate.

    Let the blueberry-chocolate bark chill in the fridge for at least an hour, or until fully set. Once firm, cut it into pieces and store in an airtight container. It will keep nicely in the refrigerator for several days.

    The health boost in this recipe comes largely from the blueberries, which are rich in anthocyanins—natural plant compounds linked to lower levels of oxidative stress and inflammation in the body. Pairing them with dark chocolate adds flavanols that have also been studied for their role in supporting heart health.

    This dessert works because it pairs naturally occurring antioxidants from fruit with the flavanol compounds in dark chocolate, a combination linked to vascular and cellular health. Keeping the ingredient list short also helps limit added sugars.
