It’s a medium-grain japonica rice (which is known for its sticky texture, unlike indica varieties, like jasmine) and similar in texture to Japanese sushi rice. While I don’t always reach for sticky rice varieties, especially if I’m making something like Indian butter chicken, I found that this variety maintains its structure a bit better than other microwave rice varieties and the sticky texture makes it a bit more forgiving.
At Costco, the Bibigo sticky rice package contains a dozen individual 7.4-ounce packages, which is especially helpful in my smaller household. With just two adults, there are often nights when I’m cooking for only myself, and single-serve packages like these can come in handy.
