    During March and April, spring produce brings a welcome burst of colour and freshness to the kitchen. Tender greens, crisp asparagus and punchy spring onions are at their peak, while British watercress and new potatoes begin appearing in markets. It’s the perfect time to cook lighter dishes that still feel comforting and satisfying after a long day.

    Our food team has created these recipes to showcase the best ingredients of the season. Peppery watercress brings a fresh bite to broths and soups, while spring onions can be cooked into savoury pancakes and stir-fries. Tender greens like spinach and leeks also provide colour and wholesome balance to traditionally richer dishes, such as lasagne and pizza.

    The recipes in this plan offer plenty of variety while keeping the cooking manageable when serving two. Baked trout with gnocchi & Dijon cream is a rich yet fresh dinner, while cod piccata with cheesy leek mash delivers bright, lemony flavours. Japanese-style charred spring onion pancakes with beef are bold with deeply savoury notes, and our spring vegetable broth with shredded chicken offers a light reset for the palate.
